Recipes:

4 medium potatoes, washed and diced
1/2 cup crumbled feta cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
Juice of 1/2 lemon
Fresh parsley for garnish
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the diced potatoes with olive oil, oregano, garlic powder, salt, and black pepper.
Spread the potatoes evenly on the prepared baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
Remove from the oven and sprinkle the crumbled feta cheese over the hot potatoes.
Drizzle with fresh lemon juice and top with red pepper flakes if desired.
Garnish with chopped parsley and serve immediately.
