Loaded Potato Soup

Ingredients:

4 large potatoes, peeled and diced

1/2 cup diced onion

4 slices crispy bacon, crumbled

2 cups chicken broth

2 cups milk

1 cup shredded cheddar cheese

2 tablespoons butter

2 tablespoons flour

Salt and pepper to taste

Fresh parsley for garnish

Instructions:

1. In a large pot, melt butter over medium heat and sauté the onion until softened.

2. Sprinkle in the flour and cook for 1-2 minutes, stirring constantly.

3. Gradually add chicken broth and milk, whisking until smooth.

4. Add diced potatoes, bring to a boil, then reduce heat and simmer until the potatoes are tender (about 15-20 minutes).

5. Stir in shredded cheddar cheese, salt, and pepper until the cheese is melted.

6. Serve topped with crumbled bacon, extra cheese, and fresh parsley. Enjoy the warmth!
