Herbed Ricotta & Parmesan Orzo with Baby Greens

1 pre-made flatbread or naan
1 cup red or black grapes, halved
4 oz Brie cheese, sliced
1 tablespoon honey (plus extra for drizzling)
½ teaspoon fresh thyme leaves
1 teaspoon olive oil
Pinch of salt and black pepper
1 tablespoon chopped walnuts (optional, for crunch)
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss the halved grapes with olive oil and a pinch of salt, then spread them on the baking sheet. Roast for 10-12 minutes until softened and slightly
caramelized.
Place the flatbread on another baking sheet and arrange Brie slices evenly over it.
Scatter the roasted grapes over the Brie, then sprinkle with fresh thyme and chopped walnuts (if using).
Drizzle with honey and season with a pinch of black pepper.
Bake for 8-10 minutes until the cheese is melted and the flatbread is crispy.
Remove from the oven, drizzle with extra honey if desired, slice, and serve warm.
