Greek Rigatoni Pasta Salad

Description

For the Flatbread Crust:
1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
2 tbsp unsalted butter, melted
1/2 cup warm water
For the Toppings:
4 oz Brie cheese, sliced
1/2 cup fresh or dried cranberries
1/4 cup sliced almonds
1 tbsp honey
1/2 tsp fresh thyme leaves (optional)
Directions:
Preheat oven to 400°F (200°C).
In a mixing bowl, combine flour, salt, and baking powder. Stir in melted butter and warm water, mixing until a soft dough forms.
Roll the dough out on a lightly floured surface into a thin rectangle or circle. Transfer to a parchment-lined baking sheet.
Arrange Brie slices evenly over the dough, then scatter cranberries and sliced almonds on top.
Drizzle honey over the toppings and sprinkle with thyme leaves if using.
Bake for 15-18 minutes, until the crust is golden and crisp, and the Brie is melted.
Slice and serve warm. Enjoy the perfect balance of sweet, creamy, and crunchy flavors!
