German Potato Salad

Description

German Potato Salad
Ingredients:
2 lbs yellow potatoes, diced
6 slices bacon, cooked and crumbled
1/4 cup white vinegar
1/4 cup chicken broth
1 tablespoon Dijon mustard
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped parsley
Instructions:

1. Boil potatoes in salted water until fork-tender, then drain and set aside. 2. In a skillet, cook bacon until crispy, then remove and crumble. 3. In the same skillet, whisk together vinegar, chicken broth, Dijon mustard, sugar, salt, and black pepper. Simmer for 2 minutes. 4. Add the potatoes and bacon back to the skillet, tossing to coat evenly. 5. Garnish with chopped parsley and serve warm.
