Creamy Tuscan Salmon with Spinach and Sun-Dried Tomatoes

Ingredients

4 salmon fillets (skinless)

2 tbsp olive oil

2 garlic cloves, minced

1 cup heavy cream

1/2 cup chicken broth

1/3 cup grated Parmesan cheese

1 cup baby spinach

1/3 cup sun-dried tomatoes (chopped)

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

Instructions

Season and Sear the Salmon:
Pat the salmon dry and season both sides with paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Sear salmon for 4 minutes on each side or until golden brown. Remove from skillet and set aside.

Prepare the Sauce:
In the same skillet, sauté garlic until fragrant. Add chicken broth, heavy cream, and Parmesan cheese. Stir until the sauce thickens slightly.

Add Spinach and Tomatoes:
Stir in baby spinach and sun-dried tomatoes. Cook for 2–3 minutes until the spinach wilts.

Combine and Simmer:
Return the seared salmon to the skillet. Spoon the sauce over the salmon and simmer for 3–5 minutes until the fish is fully cooked and infused with the creamy flavors.

Serve:
Plate the salmon with your choice of pasta, rice, or a side of crusty bread. Drizzle the creamy Tuscan sauce over the top and enjoy!
