Creamy Tuscan Chicken
Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
Salt and black pepper to taste
Fresh basil or parsley, chopped (for garnish)
Instructions:
1. Prepare the Chicken:
Season the chicken breasts on both sides with salt and black pepper.
In a large skillet over medium-high heat, warm the olive oil.
Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
2. Make the Creamy Sauce:
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet.
Reduce the heat to medium and add the heavy cream, stirring well.
Stir in the grated Parmesan cheese until it melts and the sauce begins to thicken.
Add the Italian seasoning and chopped sun-dried tomatoes. Simmer for 2-3 minutes.
3. Combine and Cook:
Return the chicken breasts to the skillet.
Add the fresh spinach, stirring gently until it wilts.
Spoon the sauce over the chicken and let it simmer for an additional 3-4 minutes to heat through.
4. Serve:
Transfer the chicken and creamy sauce to serving plates.
Garnish with chopped fresh basil or parsley.
