Creamy Sun-Dried Tomato & Basil Tortellini Salad

Description

For the Salad:
12 oz cheese tortellini
½ cup sun-dried tomatoes, julienned
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
½ cup fresh basil, chopped
½ cup mozzarella pearls
¼ cup toasted pine nuts
For the Creamy Dressing:
½ cup mayonnaise
¼ cup Greek yogurt
2 tbsp sun-dried tomato oil (from the jar)
1 tbsp lemon juice
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp salt
¼ tsp black pepper
Directions:
Cook the Tortellini: Boil tortellini according to package instructions until al dente. Drain and rinse under cold water.
Prepare the Dressing: In a bowl, whisk together mayonnaise, Greek yogurt, sun-dried tomato oil, lemon juice, Dijon mustard, garlic, salt, and black pepper.
Assemble the Salad: In a large bowl, combine cooked tortellini, sun-dried tomatoes, cherry tomatoes, red onion, basil, mozzarella pearls, and toasted pine nuts.
Toss & Serve: Pour the dressing over the salad and toss until well coated. Chill for 15 minutes before serving for the best flavor.
