For the Salad
8 oz rotini or bowtie pasta
1 cup cooked salmon, flaked
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
For the Dressing
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper, to taste
Directions
Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, oregano, salt, and black pepper.
In a large bowl, combine cooked pasta, flaked salmon, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
Drizzle the dressing over the salad and toss gently to combine.
Serve immediately or refrigerate for 20 minutes to let the flavors meld.
