Creamy Cajun Shrimp Pasta

Ingredients:
250g penne pasta

300g shrimp (peeled and deveined)

2 tablespoons olive oil

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

3 garlic cloves (minced)

1 cup heavy cream

1/2 cup chicken or vegetable broth

1/2 cup Parmesan cheese (grated)

1 tablespoon Cajun seasoning

Salt and black pepper (to taste)

2 tablespoons fresh parsley (chopped)

Toasted garlic bread (optional, for serving)

Instructions:
Cook the pasta: Bring a pot of salted water to a boil. Cook penne according to the package directions. Drain and set aside.

Season and cook the shrimp: In a large skillet, heat olive oil over medium-high heat. Toss the shrimp with Cajun seasoning, then sauté for 2-3 minutes until pink and cooked through. Remove from the skillet and set aside.

Sauté the veggies: In the same skillet, add the sliced bell peppers and cook until slightly softened, about 3-4 minutes. Add the minced garlic and cook for 30 seconds, until fragrant.

Prepare the sauce: Reduce the heat to medium. Pour in the chicken broth and heavy cream, stirring to combine. Gradually mix in Parmesan cheese until the sauce thickens slightly. Season with salt and pepper.

Combine everything: Add the cooked pasta and shrimp to the skillet, tossing gently to coat everything in the creamy sauce. Heat through for 2-3 minutes.
