Crab Potato Salad
Ingredients:

2 cups crab sticks (imitation crab), chopped

2 medium potatoes, boiled and diced

1/2 cup green peas, cooked

1/4 cup chopped fresh parsley

1/4 cup diced celery (optional)

1/4 cup diced onions (optional)

Dressing:

1/2 cup mayonnaise

2 tablespoons sour cream

1 teaspoon Dijon mustard

1 teaspoon lemon juice

Salt and black pepper to taste

Instructions:

1. Prepare Ingredients:

In a large mixing bowl, combine crab sticks, diced potatoes, cooked peas, parsley, celery, and onions.

2. Make the Dressing:

In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and black pepper until smooth.

3. Combine:

Pour the dressing over the salad ingredients. Gently mix until everything is well coated.

4. Chill:

Cover and refrigerate the salad for at least 1 hour to allow flavors to meld.

5. Serve:

Garnish with extra parsley and serve cold.
