Cheesy Veggie Quesadillas

Ingredients:

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 onion
(diced)
1/2 bell pepper
(diced)
1/2 cup corn kernels
(optional)
1/2 cup cooked chicken or beef (optional)

1 tbsp olive oil

1/2 tsp cumin

1/2 tsp garlic powder

Salt and pepper to taste

Salsa (for serving)

Instructions:

Prepare the Filling: In a skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and corn (if using). Sauté for 5-7 minutes until softened. Season with cumin, garlic powder, salt, and pepper. If using, add the cooked chicken or beef and stir to combine.

Assemble the Quesadillas: Lay one tortilla flat and sprinkle a layer of both mozzarella and cheddar cheese on top. Add the sautéed veggie mixture and sprinkle a little more cheese on top before placing another tortilla on top to form a sandwich.

Cook the Quesadillas: Heat a clean skillet over medium heat. Add the assembled quesadilla and cook for 3-4 minutes on each side until golden brown and the cheese is melted inside.

Serve: Slice the quesadillas into wedges and serve with salsa on the side.
