Bruschetta with Burrata, Pesto, and Roasted Tomatoes

Description

1 baguette, sliced into 1/2-inch pieces
2 tablespoons olive oil
1 cup cherry tomatoes, halved
1 teaspoon balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 cup fresh pesto
8 oz burrata cheese
Fresh basil leaves for garnish
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, toss the cherry tomatoes with balsamic vinegar, olive oil, salt, black pepper, and oregano. Spread them onto the prepared baking sheet and roast for
15-20 minutes until soft and caramelized.
While the tomatoes are roasting, brush the baguette slices with olive oil and place them on another baking sheet. Toast in the oven for 5-7 minutes until
golden and crisp.
Spread a generous layer of pesto onto each toasted baguette slice. Tear the burrata into pieces and place on top.
Spoon the roasted tomatoes over the burrata and garnish with fresh basil leaves.
Serve immediately and enjoy!
