Beef and Cheddar Melt Sandwich
Ingredients:
4 slices of thick bread (sourdough or Texas toast)
1/2 lb cooked beef brisket or roast beef, thinly sliced
4 slices cheddar cheese
2 tablespoons unsalted butter
1 tablespoon mayonnaise (optional)
Instructions:
1. Heat a skillet over medium heat. Add the sliced beef and warm it up for 2-3 minutes. Set aside.
2. Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, layer cheddar cheese, warm beef slices, and another cheddar slice. Top with another slice of bread, buttered side facing out.
3. Place the sandwich on the skillet and grill for 2-3 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.
4. Remove from the skillet and let it rest for a minute. Slice in half and serve warm.
5. Optional: Spread a thin layer of mayonnaise inside for extra flavor. Enjoy!
