Strawberry Layer Cake
Ingredients:
For the Cake:
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter (softened)
2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup whole milk
For the Frosting:
1 cup unsalted butter (softened)
4 cups powdered sugar
½ cup strawberry puree
1 tsp vanilla extract
For Decoration:
Fresh strawberries
Instructions:
Prepare the Cake Batter:
Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
In a bowl, sift together the flour, baking powder, and salt.
In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla.
Gradually alternate adding the dry ingredients and milk to the wet mixture, beginning and ending with the dry ingredients.
Bake the Cake Layers:
Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool completely on a wire rack.
Make the Frosting:
Beat the butter until creamy. Gradually add powdered sugar, strawberry puree, and vanilla extract, mixing until smooth.
Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of frosting evenly on top. Repeat with the remaining layers.
Use the frosting to coat the top and sides of the cake. Decorate with fresh strawberries.
Chill and Serve:
Chill the cake for at least 30 minutes before serving.
