Creamy Queso Dip Recipe
Ingredients:
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 tbsp butter
1 small onion (finely chopped)
2 cloves garlic (minced)
1 cup milk
1/2 cup diced tomatoes (canned or fresh)
1/4 cup chopped green chilies
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
Fresh cilantro (chopped, for garnish)
Tortilla chips (for serving)
Instructions:
1. Sauté the aromatics: In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.
2. Create the sauce base: Reduce the heat to low and stir in the milk. Gradually add the shredded cheddar and Monterey Jack cheeses, stirring continuously until melted and smooth.
3. Add the flavor: Mix in the diced tomatoes, green chilies, smoked paprika, and cayenne pepper. Cook for another 2-3 minutes, allowing the flavors to combine.
4. Serve: Pour the queso dip into a serving bowl. Garnish with fresh cilantro and serve warm with tortilla chips.
