Pan-Seared Halibut with Lemon Butter Sauce

Ingredients:

For the Halibut:

2 halibut fillets (about 200g each)

2 tablespoons olive oil

Salt and freshly ground pepper to taste

For the Sauce:

3 tablespoons unsalted butter

2 cloves garlic, minced

1/4 cup chicken or fish broth

2 tablespoons fresh lemon juice

1 tablespoon fresh parsley, chopped

For the Side:

200g asparagus, trimmed

1 tablespoon olive oil

Salt and pepper to taste

Instructions:

1. Prepare the Halibut:

Pat the halibut fillets dry with a paper towel.

Season both sides with salt and pepper
.

2. Cook the Halibut:

Heat olive oil in a skillet over medium-high heat
.

Sear the halibut for 3-4 minutes per side, until golden brown and cooked through. Remove and set aside.

3. Cook the Asparagus:

In the same skillet, add olive oil and sauté the asparagus for 3-4 minutes until tender-crisp
. Remove and set aside.

4. Make the Sauce:

In the same skillet, melt butter and add minced garlic
.

Stir for 1 minute, then add chicken or fish broth and lemon juice
.

Simmer for 2-3 minutes until slightly reduced, then stir in parsley
.

5. Serve:

Plate the halibut alongside the asparagus. Drizzle the lemon butter sauce over the halibut and garnish with extra parsley
.
