Pineapple Upside-Down Cookies
Ingredients:

1 1/2 cups flour

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter (softened)

3/4 cup granulated sugar

1 egg

1 tsp vanilla extract

6 pineapple slices (cut into smaller rounds to fit the cookies)

6 maraschino cherries

1/4 cup brown sugar

2 tbsp butter (melted)

Instructions:

1. Preheat Oven: Set the oven to 180°C (350°F) and line a baking sheet with parchment paper.

2. Prepare Topping: Mix brown sugar and melted butter. Place a small dollop of this mixture on the baking sheet where each cookie will sit. Add a small pineapple slice and a cherry in the center.

3. Make Cookie Dough: In a bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and granulated sugar until fluffy. Beat in the egg and vanilla, then gradually add dry ingredients.

4. Assemble Cookies: Scoop dough onto the prepared topping, covering the pineapple slices. Gently press to flatten slightly.

5. Bake: Bake for 12-15 minutes until golden brown. Let cool for 5 minutes, then carefully flip the cookies to reveal the pineapple topping.

6. Serve & Enjoy: Serve warm or at room temperature.
