Cinnamon Roll Pancakes

Ingredients:

For the Pancakes:

1 cup (125g) all-purpose flour

1 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

3/4 cup (180ml) milk

1 egg

1 tbsp melted butter

For the Cinnamon Filling:

1/4 cup (60g) melted butter

1/4 cup (50g) brown sugar

1 tsp ground cinnamon

For the Cream Cheese Glaze:

2 oz (60g) cream cheese, softened

1/4 cup (30g) powdered sugar

1 tbsp milk

1/4 tsp vanilla extract

Instructions:

1. Prepare the Cinnamon Filling:
In a small bowl, mix melted butter, brown sugar, and cinnamon. Transfer the mixture to a piping bag or plastic bag with a small corner cut off.

2. Make the Pancakes:
In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. In another bowl, combine milk, egg, and melted butter. Pour wet ingredients into the dry ingredients and mix until just combined.

3. Heat a non-stick skillet over medium heat. Pour 1/4 cup of pancake batter into the skillet. Pipe a swirl of the cinnamon filling onto the batter. Cook until bubbles appear on the surface, then flip and cook for another minute. Repeat with remaining batter.

4. Prepare the Glaze:
In a small bowl, whisk together cream cheese, powdered sugar, milk, and vanilla extract until smooth.

5. Serve:
Drizzle cream cheese glaze over warm pancakes and enjoy this indulgent treat!
