Creamy Garlic Mushroom Chicken
Ingredients:
2 large chicken breasts
1 tbsp olive oil
2 tbsp butter
200g mushrooms, sliced
3 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tsp dried thyme
1/2 tsp black pepper
Salt to taste
Fresh thyme for garnish
Instructions:
1. Prepare the Chicken:
Season the chicken breasts with salt and black pepper.
2. Sear the Chicken:
Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side until golden brown and fully cooked. Remove and set aside.
3. Cook the Mushrooms:
In the same skillet, melt butter. Add the sliced mushrooms and cook until they are golden and softened.
4. Add Garlic:
Stir in the minced garlic and sauté for 1 minute until fragrant.
5. Make the Sauce:
Pour in the chicken broth and let it simmer for 2-3 minutes. Add the heavy cream, Parmesan cheese, dried thyme, and black pepper. Stir until the sauce thickens.
6. Combine:
Return the chicken breasts to the skillet, spooning the creamy sauce over them. Simmer for another 3-4 minutes to heat everything through.
7. Serve:
Garnish with fresh thyme and serve hot with mashed potatoes or steamed vegetables.
