Ham and Cheese Potato Croquettes Recipe
Ingredients:
2 cups mashed potatoes (cooled)
1 cup diced ham
1 cup shredded cheddar cheese
2 eggs (divided)
1 cup all-purpose flour
1 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
Vegetable oil (for frying)
Instructions:
1. In a mixing bowl, combine mashed potatoes, diced ham, shredded cheese, 1 egg, garlic powder, salt, and black pepper. Mix well.
2. Scoop out portions of the mixture and shape into small balls. Set aside.
3. Prepare a breading station with three bowls: one with flour, one with beaten egg, and one with breadcrumbs.
4. Roll each croquette in flour, dip into the beaten egg, and coat with breadcrumbs.
5. Heat vegetable oil in a deep pan over medium heat. Fry the croquettes in batches until golden brown and crispy (about 2-3 minutes per side).
6. Remove and place on a paper towel-lined plate to drain excess oil.
7. Serve hot, garnished with fresh parsley. Enjoy these crispy, cheesy bites!
