Creamy Shrimp Pasta
Ingredients:
12 oz fettuccine or pasta of choice
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon paprika
Salt and black pepper to taste
1 cup heavy cream
½ cup grated Parmesan cheese
2 tablespoons tomato paste
1 teaspoon red pepper flakes (optional)
2 tablespoons fresh parsley, chopped
Instructions:
1. Cook the Pasta: Boil the pasta in salted water according to package instructions until al dente. Drain and set aside.
2. Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp, garlic, paprika, salt, and black pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and are fully cooked. Remove and set aside.
3. Prepare the Sauce: In the same skillet, add the heavy cream, Parmesan cheese, tomato paste, and red pepper flakes (if using). Stir well and simmer for 3-4 minutes until the sauce thickens slightly.
4. Combine: Return the cooked shrimp to the skillet and toss to coat in the sauce. Add the cooked pasta and toss until evenly coated.
5. Serve: Garnish with fresh parsley and serve immediately.
