Creamy Sausage and Potato Soup
Ingredients:
250g ground sausage
3 medium potatoes, diced
1 small onion, chopped
2 cloves garlic, minced
3 cups chicken broth
1 cup heavy cream
½ cup shredded cheddar cheese
1 tbsp butter
½ tsp salt
½ tsp black pepper
½ tsp dried thyme
1 tbsp chopped parsley (for garnish)
Instructions:
In a large pot, melt butter over medium heat. Add chopped onion and garlic, then sauté until fragrant. Add ground sausage and cook until browned. Pour in chicken broth and bring to a simmer. Add diced potatoes, salt, black pepper, and thyme. Cook for 15 minutes or until potatoes are tender. Reduce heat and stir in heavy cream and shredded cheddar cheese. Simmer for another 5 minutes. Garnish with chopped parsley and serve warm.
