Shrimp Cucumber Salad
Ingredients:

1 lb cooked shrimp, peeled and deveined

2 cups cucumber slices

1/2 red onion, thinly sliced

2 tbsp fresh dill, chopped

2 tbsp olive oil

1 tbsp fresh lemon juice

1/2 tsp salt

1/4 tsp black pepper

Instructions:

1. Prepare the Salad Base: In a large bowl, combine the cooked shrimp, cucumber slices, and red onion.

2. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper until well blended.

3. Combine and Toss: Pour the dressing over the shrimp mixture. Add chopped dill and gently toss until all ingredients are well coated.

4. Serve: Serve immediately or chill in the refrigerator for 30 minutes before serving for enhanced flavor.

Notes: This refreshing salad pairs well with crusty bread or as a light main dish. For extra flavor, add a sprinkle of feta cheese or a dash of garlic powder to the dressing.
