Crispy Chicken Alfredo

Ingredients:
12 oz fettuccine pasta

2 chicken breasts, breaded and fried

1 cup all-purpose flour
2 eggs, beaten

1 cup breadcrumbs
2 tbsp olive oil
2 tbsp unsalted butter

2 garlic cloves, minced

1 1/2 cups heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped

Instructions:
Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine until al dente according to package instructions. Reserve 1/2 cup of pasta water, drain, and set aside.

Bread the chicken:
Coat the chicken breasts in flour, dip them in the beaten eggs, and cover them with breadcrumbs.

Cook the chicken:
Heat olive oil in a skillet over medium heat. Fry the breaded chicken until golden brown and fully cooked (about 5-6 minutes per side). Remove and let rest for a few minutes before slicing into strips.

Prepare the Alfredo sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in the heavy cream and Parmesan cheese, whisking until the sauce is creamy and smooth. Season with salt and pepper to taste.

Combine pasta and sauce:
Add the cooked fettuccine to the Alfredo sauce and toss to coat evenly. If the sauce is too thick, stir in a bit of the reserved pasta water.

Assemble the dish:
Plate the creamy Alfredo pasta and top with slices of crispy chicken.

Garnish and serve:
Sprinkle with fresh parsley and serve hot.
