Creamy Tuscan Chicken Pasta

Ingredients:

For the pasta:

12 oz rotini pasta (or any short pasta)

2 tbsp olive oil
1 lb chicken breast, diced

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup spinach, fresh

1 cup heavy cream

1/2 cup Parmesan cheese, grated

1 cup chicken broth
1 tsp Italian seasoning

Salt and pepper to taste

Optional for serving:

Garlic knots or bread rolls

Instructions:

Cook the Pasta:

Boil pasta according to package instructions. Drain and set aside.
Cook the Chicken:

Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and Italian seasoning. Sear the chicken until fully cooked and golden brown. Remove and set aside.
Make the Sauce:

In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and cook for 1 minute. Stir in chicken broth and heavy cream, letting it simmer.
Gradually add Parmesan cheese and stir until the sauce thickens.
Combine Everything:

Toss in the cooked pasta, spinach, and chicken. Mix until well combined and the spinach wilts. Adjust seasoning with salt and pepper if needed.
Serve and Garnish:

Serve hot with a side of garlic knots or rolls for dipping. Garnish with extra Parmesan and fresh herbs if desired.
