Ingredients:

1 lb flank steak or beef of choice

8 small corn or flour tortillas

1/2 cup shredded mozzarella cheese

1/4 cup chopped red onion

1/4 cup chopped cilantro

2 tablespoons olive oil

1 tablespoon taco seasoning

Salt and pepper to taste

Lime wedges

For the Sauces:

1/4 cup sour cream

1 tablespoon mayonnaise

1 teaspoon lime juice

1 teaspoon chopped cilantro

Hot sauce or salsa (to taste)

Instructions:

Cook the Beef: Season the beef with taco seasoning, salt, and pepper. In a skillet, heat the olive oil over medium-high heat. Cook the beef for 4-5 minutes per side, or until browned and cooked through. Remove from the pan and let it rest before shredding the beef.

Prepare the Sauces: In a small bowl, mix together sour cream, mayonnaise, lime juice, and cilantro to make a creamy sauce. In another bowl, set aside your favorite hot sauce or salsa for extra heat.
