Creamy Salmon Alfredo Pasta

Ingredients:
12 oz fettuccine pasta

1 lb salmon fillet, cubed

2 tbsp olive oil
2 tbsp unsalted butter

2 garlic cloves, minced

1 1/2 cups heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning
Salt and pepper to taste

Fresh thyme or parsley for garnish

Instructions:
Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Sear the salmon:
Heat olive oil in a skillet over medium-high heat. Season the salmon cubes with salt and pepper. Cook for 2-3 minutes per side until golden and just cooked through. Remove from the skillet and set aside.

Prepare the Alfredo sauce:
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Stir in heavy cream and Parmesan cheese, whisking until smooth. Add Italian seasoning, salt, and pepper to taste. Simmer for 3-4 minutes until the sauce thickens slightly.

Combine pasta and sauce:
Add the cooked fettuccine to the skillet and toss to coat in the Alfredo sauce. If the sauce is too thick, stir in a bit of the reserved pasta water to achieve the desired consistency.

Top with salmon:
Gently place the cooked salmon cubes on top of the pasta and spoon some sauce over them.

Serve and garnish:
Plate the pasta, garnish with fresh thyme or parsley, and serve hot.
